Not everyone has tried a croquette with turkey bacon, but after having these you’ll be handing out the recipe.

Ingredients



  • 1 pack Kunzler Turkey Bacon
  • 1 lb. Potatoes, peeled and diced
  • 2 T. Butter
  • 4 T. Half & Half
  • 1 t. Salt
  • 1 ½ C Shredded Italian Cheese Blend
  • ½ C. Flour
  • 3 Eggs
  • 2 C. Italian Seasoned Bread Crumbs

Directions



Step 1

Preheat oven to 350 F. Remove bacon from packaging, layout on sheet tray

Step 2

Place tray of bacon in the oven, bake until golden brown. Approximately 18-20 minutes

Step 3

Peel and dice potatoes, place in large pot covered with water. Place on burner set to high heat. Cook until fork tender.

Step 4

Drain potatoes, mash completely. Stir in butter, half and half, salt, chopped turkey bacon, and cheese.

Step 5

Using a small scoop or large spoon, scoop into 14 equal portions. Gently roll into ball or cylinder shape.

Step 6

Place on sheet tray and refrigerate for approximately 25 minutes.

Step 7

Setup a breading station using 3 medium sized bowls.

Step 8

First bowl add the ½ C flour. Second bowl beat the 3 eggs. And the last bowl add the 2 C seasoned bread crumbs.

Step 9

Use one hand for the dry breading’s and one hand for the eggs. This will help prevent breading your fingers.

Step 10

Dust the croquettes in the flour, transfer to the eggs, and allow excess drip off, finish by covering in bread crumbs.

Step 11

Transfer to a paper lined tray, and repeat steps until all croquettes are completely breaded.

Step 12

Setup a fryer to 350 F. If you don’t have an air fryer or tabletop fryer place large pot with oil on medium high heat.

Step 13

Fry croquettes in batches, turning if necessary. Croquettes should be finished in 4-6 minutes.
