Ingredients



  • 1 pack Kunzler Turkey Bacon, chopped into ½ - ¾ “pieces
  • 4 Leeks, cut crosswise into thin slices
  • 2 T. Olive oil
  • 1 pack Green Zucchini “noodles”
  • 1 pack Yellow Zucchini “noodles”
  • 1 Lemon
  • 6 oz. Egg whites
  • ½ C. Parmesan Cheese
  • ½ C. Fresh Parsley, chopped (optional)

Directions



Step 1

Chop the leeks, place in large container with cold water. Rinse to remove any dirt

Step 2

Chop the bacon, set aside

Step 3

Zest the lemon and set aside. If you do not have a zester, use vegetable peeler and finely dice the strips

Step 4

Place a large sauté pan on stove on medium high heat

Step 5

Add 2 tablespoons oil and add the leeks. Cook for 8-10 minutes until the leeks are slightly golden

Step 6

Add Turkey bacon, cook additional 6-8 minutes. Stirring to incorporate

Step 7

Add both zucchini noodles, lemon zest, and juice from the lemon. Stir to incorporate all ingredients

Step 8

Add egg whites and parmesan cheese. If necessary add 2-4 T warm water to create sauce

Step 9

Finish by stirring in the chopped fresh parsley
