Ingredients



  • 2 Kunzler Crock Hocks
  • ½ Onion, peeled and diced
  • 2 Garlic cloves, crushed
  • (1) 14.5 oz can Chicken broth
  • 2 C. White rice, cooked
  • 1 can Enchilada sauce
  • 1 bag Shredded taco blend cheese
  • 12 Tortillas

Directions



Step 1

Place Hocks on the bottom of the Crock Pot.

Step 2

Place diced onion, garlic, and broth on top of the Hocks

Step 3

Place lid on top of slow cooker, and set for 8 hours on low heat

Step 4

Prepare white rice according to packaging instructions

Step 5

Carefully remove hocks and place on serving dish. (Meat should easily come off the bone).

Step 6

Setup to prepare your burritos, warm the tortillas lightly in a skillet or in the microwave. Scoop about 1/2 cup of the meat mixture and ¼ C Rice into each tortilla and sprinkle with a bit of cheese.

Step 7

Roll up burrito style (folding the one end and leave one open)

Step 8

Top with enchilada sauce if desired
