Ingredients
- 1 lb Kunzler Original Bacon
- 1 C. Pancake Mix
- ¼ C. Butter, melted
- ½ C. Strawberry Jam
- Appetizer skewers
Directions
Step 1
Preheat oven to 350 F. Layout bacon on sheet tray, bake in the oven for 20-24 minutes until crispy. cut into smaller pieces and set aside.
Step 2
Prepare the pancake mix according to the package directions.
Step 3
Heat skillet to medium heat, spray with oil or brush with butter.
Step 4
Carefully spoon out batter to 2” rounds. Allow to cook 2-3 minutes until the bubbles form, carefully flip and cook another 1-2 minutes. Continue until you have 18-24 mini pancakes.
Step 5
Layout all the pancakes, place small dollop of strawberry jam on each pancake, top with appropriately sized bacon piece.
Step 6
Stack and carefully skewer the stack. Serve and enjoy!
Step 7
If making ahead, prepare all pancakes, freeze on clean baking tray. Then store in zip lock bag in freezer. To reheat, arrange on single layer on baking tray and cover with foil. Bake at 350 F for 6-8 minutes until warm, then assemble and stack.
