Ingredients
- 1 (16 oz.) pkg. Elbow macaroni
- 2 T. Olive oil, divided
- 1 pkg Kunzler franks, chopped into 1" pieces
- 1 T. Butter
- 1 medium Onion, finely chopped
- 2 T. Flour
- 1/2 c. Chicken broth
- 2 c. Milk
- Salt & pepper
- 1 T. Spicy mustard
- 2 T. Ketchup
- 3 c. Sharp cheddar cheese, shredded
Directions
Step 1
Cook macaroni according to package directions for al dente.
Step 2
Preheat broiler and set oven rack to second row.
Step 3
Heat a large, deep non-stick skillet over medium-high heat. Add 1 tbsp. olive oil and then hot dogs. Brown on both sides.
Step 4
Remove hot dogs with a slotted spoon and move onto a paper towel.
Step 5
Add another tbsp. olive oil and butter to the same pan. Add onion and cook until soft.
Step 6
Add flour and cook another minute. Add chicken broth and cook another minute.
Step 7
Whisk in milk and bring to a low boil, stirring constantly. Season with salt and pepper. Stir in mustard and ketchup.
Step 8
Turn heat to low and add 2 cups cheddar cheese. Stir until melted.
Step 9
Drain pasta and combine with hot dogs and cheese sauce. Pour into a large casserole dish and top with the remaining cheddar cheese.
Step 10
Melt and brown casserole under broiler, about 2 minutes.
