With School Nutrition in mind, this recipe promotes meal components of 1oz protein and 1/2 cup vegetable servings.

Ingredients
- 8 portions of Kunzler sliced smoked ham (5 slices)
- 4 heads Leaf Lettuce
- 8 slices Pineapple, cut into chunks
- 2 C. Craisins
- 2 C. Cheddar cheese, shredded
- 1 C. Honey mustard dressing
Directions
Step 1
Prepare fresh pineapple, remove top and bottom. Remove outer rind. Cut in half. Reserve one half of the pineapple.
Step 2
Wrap spare half and place in refrigerator for later use. Cut remaining half into quarters, remove core, and cut into chunks.
Step 3
Wash and core the leaf lettuce. Prepare for salads and divide onto 8 plates.
Step 4
Roll the ham portions and slice into several pieces. Arrange nicely on each salad.
Step 5
Divide pineapple chunks between 8 salads, sprinkle with craisins and cheddar cheese.
Step 6
Finish the salads by placing honey mustard dressing in cups served on side of salad.
