Ingredients



  • 2 T. Vegetable oil
  • 1 medium Onion, diced
  • 1 Garlic clove, peeled and crushed
  • 2 C. broccoli, chopped
  • 1 large Sweet potato, peeled and shredded (2 Cups)
  • 2 C. Kunzler ham, diced, set aside
  • 12 eggs (or 1 quart ready eggs)
  • 1 C. Yogurt
  • Salt to taste
  • Cheddar cheese for garnish

Directions



Step 1

Preheat oven to 375 F

Step 2

Place sauté pan on medium high heat, add vegetable oil, and diced onion. Cook for 6-8 minutes.

Step 3

Add crushed garlic, stir and cook an additional 4 minutes.

Step 4

Add broccoli, cook until slightly softened, about 6 minutes. Remove pan from heat.

Step 5

Lightly spray a 9x13 pan, place shredded sweet potato on the bottom to form a crust.

Step 6

Arrange the cooked vegetables evenly on top of the sweet potato, followed by the diced ham.

Step 7

In a medium mixing bowl, stir the eggs into the yogurt, incorporating completely.

Step 8

Pour egg mix evenly into the 9x13 pan, using care not to disturb the arranged vegetables.

Step 9

Bake for 10 minutes, top with cheddar cheese and bake an additional 12 minutes until eggs are set.
