Who doesn’t love Mousse? And we’re not talking about the cuddly kind with antlers. This tart will make your mouth water just by looking at it!

Ingredients
- 4 slices Kunzler Black Forest Bacon
- 8 oz Chocolate
- 16 oz Heavy cream
- 2 oz Kunzler Black Forest Bacon Fat
- 4 oz Butter
- 1 C. Sugar
- 3 Eggs
- 8 oz chocolate, melted
- ¾ C Flour
- 32 Oreo cookies (about ¾ of 15.5 pack)
- ½ C Pretzels
- 1 stick Unsalted butter
- 4.25 oz Hershey Dark Chocolate
- 4 T reserved Kunzler Black Forest Bacon Fat
- 2 T Coffee
- 2 T Heavy Cream
Directions
Step 1
Line a baking sheet with parchment paper, bake pack of bacon 20-22 minutes at 350 F.
Step 2
Drain and reserve bacon fat. Place slices of bacon on plate lined with paper towel. (Reserve 4 slices diced for inside mousse topping and 4 slices diced for sprinkling over the top of finished tart)
Step 3
Mousse: Melt chocolate, stir in heavy cream until combined. Chill until ready to fill crust.
Step 4
Brownies: mix bacon fat, butter, & sugar. Stir in eggs, then chocolate & flour. Bake in pan at 350 F 22 minutes until set.
Step 5
Crust: grind Oreos and pretzels, place in mixing bowl, melt butter and combine. Press into 11" tart pan.
Step 6
Ganache: Melt chocolate, stir in heavy cream, reserved bacon fat, coffee. Stir until ganache is shiny.
Step 7
Assembly of Tart: Cut brownies into chunks, place in bottom of prepared crust. Drizzle with ganache.
Step 8
Whip mousse to stiff peaks. Place layer over the drizzled ganache. Sprinkle pieces of Black Forest bacon, and top with remaining mousse. Smooth the top and score into either 12 or 14 portions.
Step 9
Top with whipped cream and place in freezer to "set" (about 35 minutes).
