Ingredients



  • 1 pack Kunzler Low Sodium Bacon
  • 1 Cucumber
  • 2 C salad greens (50/50 spring mix & baby spinach)
  • 1 Container grape tomatoes
  • Bamboo knot picks

Directions



Step 1

Preheat oven to 350 F, layout bacon on sheet pan. Bake for about 20 minutes or until crispy.

Step 2

Drain bacon on plate lined with paper towels. Carefully cut into large thin sticks. Then cut each stick into thirds.

Step 3

Clean cucumber and slice lengthwise into thin slices using mandolin.

Step 4

Cut long slices in half and lay on cutting board.

Step 5

Carefully lay bacon strip and a few greens on the beginning section of cucumber, then roll up

Step 6

Secure the completed roll with the bamboo pick and finish by skewering a grape tomato to secure the end.

Step 7

Repeat until all cucumber slices are assembled. Arrange neatly on serving dish.
